Our food comes from different regions of Colombia, making their typical dishes mouthwatering to our customers. Starting with the Cundiboyecense region of Colombia we offer, the “Ajiaco”, inspired by the Muiscas Tribes and European traditions. The Muiscas used to consume corn and potato soups as their traditional dishes, they used “guascas” as one of their main ingredients to give it flavor and spice. Also from that region we offer the “Tamal con Chocolate”, the “Sobrebarriga” and one of our signature dishes the “Parrillada”. In the Antioqueña region they stepped away from the international cuisine and for generations their traditional dishes were born and grown in isolated rural areas away from the rest of the country which have survived the processes of globalization, industrialization and urbanization.
One of our biggest sellers comes from this region, the “Typical Platter”, which utilizes one of their main ingredients, Frijol con Pesuña. Also from that region we have our delicious “Arepas con queso” and the “Arepa de chocolo”, the “Arroz con Pollo” and the “Empanadas”. In the Costa Caribeña region, the most popular dish is the “Sancocho”, which varies in preparations and ingredients, there are Sancochos of all kind, fish, beef and hen. We carry them all in our menu. The dishes from this region come from Indian, European, Black and Mestizo cultures, other dishes in our menu that come from this beautiful region are the “PargoRojo”, the “MojarraFrita”, the “Salmon a la parrilla” and another signature dish of ours the “Cazuela de Mariscos”.
Colombia’s cuisine is the result of fusion food, culinary practices and traditions of local, European (mostly Spanish), Indian and African American cultures. Since there is no consensus on a single dish that could represent the Columbia cuisine, we have taken a bit of each region to create our menu and have implemented a few original dishes like the “Mi Tierrita Platter” which consists of different meats and is accompanied by our signature rice and beans. Another unique fact about Mi Tierrita is the way we make our chicken, we use a rotisserie machine that cooks with charcoal, and our chicken is made fresh on a daily basis to ensure the juicy and unique taste.
